We are elated to offer this cuvée from Raventos i Blanc by the glass. De La Finca is made from the coveted vineyard plots surrounding the winery including Vinya dels Fossils. Minerality prevails on this ancient sea floor and the resulting wine has a dry persistence with a light mousse of bubbles. The perfect wine for our entire menu :)

2024 Kobal Wine Estate ‘Bajta’, Blaufrankish, Podravje, Stajerska Slovenia
This bubbly bit of pink magic left us speechless! 100% Blaufränkisch, 100% delicious. A fun, fresh and joyous expression of the variety from Slovenia is dazzling, jumpy, a kiss of sweetness and offers beautiful red and blue fruits. Kobal wines come from the Haloze appellation in Stajerska, Slovenia, and have been considered a top wine growing sites in central Europe since Roman times. The vines are situated on steep slopes mostly of marl and 35 year old vines speak vividly. Well made and very stable, so if you don't finish it in one sitting, you can enjoy it over a few days. This wine needs no food, but it sure could be enjoyed with a spicy dish or fresh fruit.

La Collina is an organic/biodynamic farming cooperative that not only produces this gem, also vegetables, grains, livestock, bees, and dairy for Parmagiano-Reggiano. 12 months sur lie this wine is from 60 year old vines on Amphibolite and Gneiss-derived soils it shows subtle aromas of green melon leaving a refreshing and balanced mouth feel and polite finish.

2023 Malvira, Arneis, Roero, Piedmont, Italy
Probably the most revered house for the variety, Malvira's claim to be the resurrector of Arneis is completely grounded. Saglietto is the oldest vineyard of the Damonte family and the production of Arneis grapes of Malvirà began in this vineyard. The Damonte’s have championed the variety producing it from organically farmed vineyards since 2017 and elaborating in the variety’s uniqueness and connection to the region. Arneis is fresh with fruity aromas highlighting citrus balanced with structure and savoriness.

2024 Julian Haart, 1000L, Riesling, Piesport, Mosel, Germany
The entire county was ravaged by an early bud break and then a late frost. Then the rain and clouds and cooler weather inhibited ripeness but as Julian said, “2024 had rain, ok, but no fog. It would rain, but then an hour later everything is dry. It’s the fog that scares me”. Some of the most beautiful flavors thrive in the shade which explains the greatness that Haart was able to coax from this vintage. Subtle sweet aromas from rocks and gravel have to be sniffed out of the glass to bear fruit. The body is linear, taught while the finish is long and expertly dry.

Biodynamically farmed since 2007 Judith beck takes great care in promoting soil health in the 15 hectare estate. This Pinot Blanc Matured on the lees in acacia barrels is direct and structured. It’s a mild bodied wine showing off with aromas from stone fruit, sweet citrus with a little saltiness and creamy from time on the lees.

2023 Chateau Lestignac, Hors Les Murs ‘Blizzard’, Sauvagnon Blanc | Sémillon, Bergerac, France
Back again for another vintage the 23’ Blizzard shows up with pronounced aromas of grapefruit, mango and passion fruit held up with a very textural mouth feel and persistent finish. The estate is something of a biodynamic oasis in a desert of conventional farming. Camille and Mathias Marquet inherited the family farm 16 years ago and, to their neighbor’s bafflement, made some extraordinary transitions to their estate sacrificing yield for the sake of polyculture and replacing lesser vines with gardens and livestock.

Just as advertised Beck has assembled a ‘Mish Mash’ of varieties planted on the estate including Gruner Veltliner, Neuburger, Weissburgunder, Welsschriesling, Zweigelt, Scheurebe and others. Directly pressing the red varieties and leaving the whites to macerate on the skins for 4 days evokes subtle floral aromas with plum, clementine, quince popping out here and there as the soft tannins elaborate on the palette.

2023 Fossil & Fawn Pinot Noir Willamette Valley, Oregon
We have tasted countless Pinot’s from this region as it’s kind of a calling card for the Valley. Many stand out as distinctly domestic with new world stylings. Every once and a while there is an outlier which was the case when Jim Fischer brought us this version boasting an old world flair. The aroma is ethereal, earthy with nuanced fruit and herbs under a blanket of minerality. The body is fresh and taut but built for drinking on its own or great with foods.

2023 Domaine de la Saraziniere ‘Le Pepie’ Gamay Macon-Serrieres, vin de Bourgogne
On granitic and sandy soils, Le Pepie is from young Gamay vines exhibiting fresh mentholated aromatics of black fruits, blood orange and dried leaves with a light body that is direct and complex. Phillipe and Guillaume work diligently in the vineyard so it’s possible to vinify a pure wine, free of manipulation and additives that could otherwise impede expressing its terroir.

2022 Frédéric Mabileau Les Rouillieres Cabernet Franc, Saint-Nicolas-de-Bourgueil, Right Bank, Loire Valley, France
Les Rouillères is the Mabileau family’s calling card; pure, unadulterated Cabernet Franc made with minimal intervention; organic fruit, gentle extraction, absolutely no oak and a small amount of sulfur. It clearly expresses Cabernet Franc grown on the sandy gravel soils of Saint-Nicolas-de-Bourgueil. The nose has charming, red-black fruit and a touch of pencil shavings, while the palate bursts with juicy and succulent fruit coated in sweet, ripe tannins.

2024 Envinate Albahra, Garnacha Tintorera, Moravia Agria, Castilla-La Mancha, Spain
Castilian for “small sea” Albahra is named for the vineyard area in the Almansa region close to the town of Albacete, located at the southeastern tip of Castilla-La Mancha. The wine has concentrated sun kissed aromas from dark ripe fruit and hot rocks. It’s juicy and lively with velvety tannin that rams up with a little brightness on the finish.

2023 Domaine Lampyres ‘Harvest Moon’, Grenache | Mourvèdre, Rivesaltes VdF, Roussillon, France
Harvested on the same day and fermented together the two varieties make for a full wine, opaque, big bodied and dry. F.X. was born to grow grapes and make wine and even claims to have been born on a tractor. Often in the vineyards hours before sunrise using a headlamp to see his work, people would joke that he looked like a lampyre, or firefly in French and thus the Domaine was born.

2023 Ridge Three Valleys, Zinfandel | Carignane | Petite Sirah | Mataro | Alicante Bouschet, Sonoma County, California
Ruby red color, blackberry and raspberry on the nose this Medium bodied with smooth tannins, plum fruit and a note of vanilla on the finish. Since its inception, Ridge has focused on single vineyard wines. Three Valleys, a careful combining of parcels from complementary vineyards, is the exception. The vineyards are farmed biodynamically so no inoculation is necessary. The wine is aged for 12 months in 20% new oak and various ages of used barrels.

2021 Angelo Negro, 'Prachiosso', Nebbiolo, Roero, Piemonte, Italy
The prized ‘Prachiosso’ vineyard was cultivated with vines as far back as 1200. It is a south facing plot on calcareous sandy soil created as the Adriatic Sea receded and left us what is now the Po river. The namesake from Latin ‘Pratum chiusum’, translates to ‘a closed meadow’ describing the exposure and orientation of the hillside. Year after year this is one of my favorite wines, quintessential DOCG Nebbiolo but at a value and ready to go moments after pulling the cork. If you love it make sure you take one home to stash somewhere to forget about as long as you can.

FORTIFIED, OXIDATIVE & SWEET
2019 Château La Rame, Sémillon, AOC Sainte-Croix-Du-Mont, Bordeaux , France
South east of Bordeaux proper Château La Rame sits on one of the most prized and historical sites in the region. 20 hectares overlooking the Garonne River are south facing clay and limestone rich soils filled with ancient sea fossils. The vineyards are mostly 50 year old Semillon from where the Sainte Croix du Mont “vin liquoreux” is produced. The botrytis affected fruit naturally loses water weight concentrating aromatics and flavor into a cornucopia of stone and tropical fruit. Alcohol is still present at 13% abv and balanced perfectly with acid and residual sugar. Absolutely delightful and a great value compared to more popular sweet wines. 2 oz

Catalunya is home to one of the oldest dry aged winemaking traditions. Rancio Sec is left in glass globes in the garden to bake and evaporate into itself before being entered into a solara. This ancient process evokes beauty and complexity from this delight only made in very small quantities. An excellent accompaniment to oily fish and conserva. 2 oz

Yuste adopted a 19th century solera on his own to produce a complex and beguiling Manzanilla, between 8 and 10 years of age. This comes from keg and not bottle, so the Sherry “purist” can’t complain that it’s not “fresh.”
